Vacation ideas for Memorial Day weekend within a 6 hour drive of Los Angeles?
Trying as much as possible to avoid places that draw big crowds. We usually go to Las Vegas, Palm Springs or Santa Barbara but expect these places to be very crowded. It will be me and my wife. Looking for a place to spend some time at a nice spa, do some walking and sightseeing, participate in some fun activities like bike riding, hiking and kayaking (if possible), or watch a show and visit some museums (if available). The main purpose of the trip is to relax and unwind and spend a nice, relaxing weekend with my wife. The spa is a must, the rest are optional, as long as there are a couple of things to see or do. Thanks.

May I suggest that you go a little past Santa Barbara to the wine region in the Paso Robles-Atascadero-San Luis Obispo area.
Every thing you asked for is there. Spas, Hiking, Bike riding Museums, Community Theater. Kayaking (at the Channel Islands), quiet, relaxing clean air, and wine sampling that meets / beats anything from the Napa Valley. Add to that a (mostly) beautiful drive up the coast.

I suggest something warmer.
Go to Julian. There are desert hot springs in the area, but I don’t know if there are any spas proper down there.
Not much Kayaking, tho’.

One of my favorite places in the state is Cambria. It is definitely within your driving range and offers a variety of types of lodging. I’ve included a place that I’ve personally stayed in the past. It’s large for two people, but great for romance and relaxing. Just the thought of going back and forth between the deck spa and jacuzzi tub in the Master bath makes me feel happy. Cambria is a quiet, artsy town and is delightful on its own. If you’re feeling ambitious, you can easily make it up to the Hearst Castle for a half-day.
If you don’t want to go as far as Cambria, Pismo Beach and Morro Bay are both beautiful as well.
Another option off the beaten path is Lake Elsinore. I like the wineries and antiquing. They also have several day spas.
I also love Ojai for a weekend getaway. Plenty of spas, decent restaurants and several beautiful meditation spaces.
Have a lovely weekend!

You can go towards San Luis Obispo and go to that mission there. Then you could go to Hearst castle and have a picnic on the beach that is like 1 mile away from Hearst castle and you can walk on the beach too the beach is VERY PRETTY!
